Desi Cicale: Advanced Carcase Grading Technology

Meat imaging expert Desi Cicale will demonstrate advanced carcase grading technology and explain the potential benefits it can bring UK producers. Desi is founder and CEO of Meat Imaging USA which brought grading technology developed by MIJ (Meat Image) Japan to the USA. She will explain the science behind imagery, how it captures carcase data and how it can benefit farmers.

Desi will show the MIJ-30 camera in action and demonstrate its use via a mobile app downloaded to a smartphone. The British Wagyu Breeders Association (WBA) plans to introduce this technology to the UK which brings with it the potential to create a global standard for Wagyu beef and an internationally comparable grading system for Beef Marbling Standard (BMS).
